Get to know the culinary mind behind Thimari, Stelios Daios, our Chef from Naoussa, Greece. His journey started in 1994 at a grill restaurant in Thessaloniki, where his love for experimenting in the kitchen and crafting unique flavors grew. This passion led him back to his hometown, Naoussa, where he started operating his family-run grill spot. His restaurant became deeply loved by the wider community for its homemade dishes, made from scratch with fresh ingredients.
After 14 highly successful years of running his restaurant, our Chef moved to Santorini, where he held the position of Head Chef at a renowned grill establishment for the next 7 years. His experience in the kitchen led him to perfect his specialty: our now-famous homemade chicken gyros, seasoned with his signature Mediterranean spice blend.
London, with its lively food scene, became the canvas for the next chapter of his adventure. He acquainted himself with the city’s ambiance while contributing his skills as Chef de Partie at a prominent Notting Hill restaurant. He began envisioning a grill restaurant where he could create and share authentic Greek flavors in London, and thus Thimari was born.
Named after the precious Greek thyme, which embodies the essence of Mediterranean cuisine, Thimari offers Greek homemade dishes made from scratch, showcasing our Chef’s expertise and signature recipes.
